When it spawns again it will still be damaged as long as you do not rest at the bonfire. At this point you can land several hits before it despawns. A way of cheesing it is to run back towards the arch and the creature will begin to despawn. This enemy is intimidating but defeatable by timing its attacks and striking when exposed.
